Protein Balls

½ cup pitted dates

1 cup Brazil nuts

1 cup raw cashew

1 cup desiccated coconut

1 tsp vanilla extract or vanilla bean paste

1 tsp cinnamon

2 tbs raw cocao powder

2 tbs chai seeds

Extra coconut to roll

 

Put dates in boiling water for 5 minutes then drain

Place nuts into blender and process until crumbly add all remaining ingredients and blend until mixture is crumbly and sticking together.

Roll in tablespoon size balls

Roll in extra coconut

Store in airtight container

Will last in fridge for 2 weeks

If the temptation to eat them all at once is too high you can freeze them.
